Barfi Khaayenge Kya? 😋

Happy Diwali Ahmedabad!!
We know the celebrations are a little less glitzy and glamorous this year, but hey, that does mean we will be any less excited, right? This year is all about a nice homey Diwali, where we share it with our closest ones. And what makes Diwali more special? You guessed it right. Some fantastic and yummy sweets which are made hygienically at home. Well, We aren’t talking about “The Barfi” from Mirzapur Web Series but we’re actually talking about a unique barfi made from Paneer. Yes.. A Must Try.
Okay, now don’t stress out. You won’t have to bury yourself in the kitchen and look at everyone celebrating the festival without you. We have two quick and easy recipes to cater to your family’s sweet tooth. Diwali Aprons on people!
Kheer with a hidden surprise 
Normal kheer with milk and rice is old news, right. Try this easy Paneer Payasam Recipe. Don’t let the name get you freaked out. It’s basically paneer kheer, and it’s a cup full of yum, and this is how you make it
Ingredients
  • 3/4th Cup of crumbled Paneer
  • 2 Cups of Milk
  • 1/4th Cup of sweetened condensed
  • 2 Green Cardamom pods
  • 1/2 tsp Spoon sugar
  • A few strands of saffron and some Pistachios for garnish (Optional)
Method
  • Keep the milk to boil on low heat.
  • Put the Paneer in hot water till its soft and crumble Paneer with hand as fine as you can.
  • Grind the cardamom and sugar until fine.
  • Add the sweetened condensed milk to the boiling milk and stir properly.
  • Bring to boil again, add the cardamom and sugar powder.
  • Add the crumbled Paneer in the boiling milk and stir till it’s properly mixed.
  • Keep the milk on low heat for another 5 mins and then cool it off.
  • Garnish it with chopped pistachios and some saffron and serve your family this delicious treat.
Barfi ka tukda (Kalakand)
This dish is like experiencing heaven with each bite, and it will make your family and friends fall in love with you. It’s super quick and easy to make, and eating it will be like gaining ten times more reward.
Ingredients
  • 400gms Sweetened condensed milk
  • 250gms crumbled Paneer
  • 2 Pods Ground cardamom
  • 1 tsp rose water
  • 1 tsp ghee
  • 100 gm chopped Pistachios
Method
  • Pour the condensed milk in a heavy bottom pan and start heating on low flame
  • Put Paneer in hot water until it is soft and then crumble fine with your hand
  • Add the crumbled Paneer to the condensed milk and stir properly
  • Add the rose water
  • Keep stirring constantly to prevent it from burning (will take 5-8 mins).
  • As the mix turns into a thick mass, add the cardamom powder, mix well and turn off the stove.
  • Grease a plate with ghee and add the mixture to it, and spread it.
  • Sprinkle the chopped pistachios and gently press them in the Kaland
  • Let it cool off, and then serve
